Finally, Jam Today!

“It’s very good jam,” said the Queen.
“Well, I don’t want any today, at any rate.”
“You couldn’t have it if you did want it,” the Queen said. “The rule is jam tomorrow and jam yesterday but never jam today.”
“It must come sometimes to ‘jam today,'” Alice objected.
“No it can’t,” said the Queen. “It’s jam every other day; today isn’t any other day, you know.”

One of my favourite scenes from Alice in Wonderland is the befuddled musings from the slightly askew White Queen (played by Carol Channing).

“You can wish as you want,
You can want as you wish.
Still you’d better hear me say:
Jam tomorrow, jam yesterday,
But never, ever jam — today!”

Jam Today - Sweet Start Suite jameThe reason this song popped into my head is that I have recently started making my own jam.

For the past year, I would invest in locally made jam for our rental unit. I would purchase blackberry apple or strawberry rhubarb, dress it up in cute jars and offer it to guests for their use on homemade croissants or French Toast.

It wasn’t until I stumbled on a recipe for refrigerator jam that I realized how easy it would be to make “refrigerator jam today.”

Refrigerator jam is made fresh in small batches (read: less time consuming) and you don’t have to fret about canning. It’s really a stove top reduction that becomes a tasty topper for toast using apple shreds for the pectin, a splash of lemon, a bit of sugar and berries.

Yeah. That’s it. Simple.

But the taste is outstanding. It is freshly made to order.

While today isn’t any other day, we can now have jam when the mood strikes.

Finally, jam today.
